Weekly Menu Plan 1/9

While I only have my husband and I to cook for since all of the children are grown, we are on a fixed income, so every dollar counts and has to be budgeted. That's why I still plan our weekly menu.

If you are on a strict budget

or just want to save a little money, then Meal Planning is just what you need. It's a great way to keep your grocery budget in check, and make sure you don't go over at the register.

You'll notice that I only share our supper menu, because breakfasts and lunches are pretty much the same week to week. Breakfasts consist of either eggs with Homemade Bread, Pancakes, Waffles, Homemade Granola, or Protein Smoothies, along with fruit. Lunches are mainly sandwiches, salads, or leftovers. Snacks, if any, are usually fruit, a savory dip with veggie sticks, a sweet dip with fruit and veggie dippers, Homemade Salsa, Guacamole and Chips, and occasionally Peanut Butter Quinoa Protein Balls.

*Italics denotes a new recipe I want to try.

Monday: Sausage Jambalaya with Cauliflower Rice, Crockpot Peach Cobbler

Tuesday: Crockpot Loaded Potato Soup in Homemade Bread Bowls, leftover peach cobbler

Wednesday: Swedish Meatballs with Zucchini Ribbons, Creamy Peanut Butter Fudge

Thursday: Sheet Pan Turkey Fajitas, leftover fudge

Friday: Balsamic Dijon Glazed Pork Chops, Roasted Brussels Sprouts, Hot Chocolate Cookies

Saturday: Family Pizza and Movie Night - Mexican-Style Corn Tortilla Pizzas, DIY Microwave Popcorn, leftover cookies

Sunday: Cheesy Spaghetti Squash Casserole, Ultimate Garlic Breadsticks, Depression Era Chocolate Cake

Have a great week everyone!
