- No need to peel zucchini, shred it skin and all to use in recipes. The color adds a beautiful touch to the finished product. (The only exception is if the zucchini is old, and has developed a tough skin).
- Zucchini should be stored in the vegetable drawer of your refrigerator, and will last 3-5 days. Leave zucchini loose, or store in a paper sack. Plastic bags can trap moisture and make the skin slimy.
- Zucchini can be shredded and frozen for later use. Once thawed it will have a lot of water, so squeeze the water out before adding it to your recipes.
