Chocolate Peanut Butter Sandwich Cookies + Giveaway - #Choctoberfest

My recipe contribution to start off chocolate week, are these fun and delicious Chocolate Peanut Butter Sandwich Cookies. These cookies are the perfect way to enjoy one of the best flavor combos I've ever had the pleasure of eating, chocolate and peanut butter. Rich, chocolaty cookies, enclose a sweet peanut butter filling, for one amazing cookie sandwich. The cookies have a slight crunch to them on the outside, but are soft and chewy on the inside. The cookies aren't overly sweet, to give the yummy sweetness of the peanut butter filling a chance to shine through. These are seriously one tasty cookie that my family LOVED, and had them making me promise to make them again soon.

Let's make some cookies!

Ingredients you'll need: Butter, Imperial Sugar, flour, cocoa, baking powder, vanilla, peanut butter, and Imperial Powdered Sugar.

Cream together butter, Imperial Sugar, and vanilla.

Whisk together the dry ingredients.

Gradually add the dry ingredients to the butter mixture. Mix until well combined.

Chill the dough for 30 minutes, then roll into balls, about the size of a walnut. Place on a parchment or foil lined baking sheet, about 3 inches apart. I totally forgot to take a picture of the dough once I had rolled them into balls, sorry.

Bake cookies at 350 degrees for 18 - 20 minutes.

Allow cookies to cool on baking sheet for 30 minutes, then gently transfer to a cookie rack to finish cooling completely.

While cookies are cooling, prepare peanut butter filling by adding peanut butter, butter, and vanilla to a mixing bowl, and blending until smooth. Add Imperial Powdered Sugar and continue blending until fully incorporated and creamy.

Once cookies are completely cooled, place a tablespoon or two of the peanut butter filling onto the flat side of one of the cookies. Gently spread it out with a butter knife, then top with another cookie, flat side down. Gently press together.


Chocolate Peanut Butter Sandwich Cookies

Ingredients

For the Cookies
1/2 cup Imperial Sugar
10 tablespoons (1 stick + 2 tablespoons) butter, softened
1 cup all-purpose flour
2 tablespoons cocoa
1 teaspoon baking powder
1 teaspoon vanilla

For the Peanut Butter Filling
3/4 cup Imperial Powdered Sugar
3/4 cup creamy peanut butter
4 tablespoons (1/2 stick) butter, softened
1/2 teaspoon vanilla

Directions

To Make the Cookies
Place Imperial Sugar and butter into the bowl of a stand mixer and mix until fully incorporated and creamy.
Add the vanilla and mix well.
In a separate bowl whisk together the flour, cocoa, and baking powder until combined.
Slowly add the flour mixture to the butter mixture a little at a time, mixing well after each addition, until well incorporated.
Place cookie dough in the refrigerator and allow to chill for 30 minutes. (For easier handling)
Pre-heat oven to 350 degrees.
Line a baking sheet with aluminum foil or parchment paper.
Remove cookie dough from refrigerator, and roll dough into balls about the size of walnuts.
Place them about 3″ apart on the baking sheet. (The cookies spread quite a bit, so make sure you give them enough room between each cookie.)
Bake cookies for 18 - 20 minutes, until they have flattened out and start to crisp up around the edges.
Remove cookies from the oven and allow to cool on the cookie sheet for 30 minutes, then gently transfer them to a cooling rack to finish cooling completely. (The cookies are a bit fragile until they are fully cooled.)

To Make the Peanut Butter Filling
In the bowl of a stand mixer, beat together the peanut butter, butter, and vanilla until smooth and creamy.
On low speed, add the Imperial Powdered Sugar and beat until combined.
Increase speed to medium-high and beat until light and fluffy, about 3 minutes.

To Assemble the Cookie Sandwiches
Using a butter knife, gently spread some of the peanut butter filling (about a tablespoon or two) onto the flat side of a cookie.
Top with a second cookie, flat side down, and press together lightly to make a cookie sandwich.
Repeat with the remaining cookies.

Makes 5 to 6 large cookie sandwiches.

Notes: Store cookies in an airtight container in the refrigerate, for up to one week.

*Cookies may be made smaller if you prefer, just reduce baking time accordingly.

  4. Favorite chocolate--Lindt 90%! My husband and I have a "thing" for chocolate molten lava cakes and whenever we try one at a restaurant, I can't resist a bite, even though I don't eat sugar and gluten anymore. ;)

    1. Oh my gosh, how can you NOT have a thing for chocolate?! I'm the same way with certain cakes, even though I know I'm not supposed to have gluten, I can't help but sneak a bite when I make one for my family.
