Coconut Cream Cilantro Lime Dip {SRC}

This recipe was supposed to go live last Monday, but due to a severe thunderstorm that came through southern Indiana on Saturday, a lightening strike fried our internet lines. We are back online now, and I wish to apologize to the person who's blog I was assigned to for July's Group D Secret Recipe Club's reveal. Due to missing group D's reveal, I am posting with group A. I had the pleasure of pursuing Mom's Test Kitchen, a blog run by Jamie for my recipe this month. Her about me section is entertaining and funny, especially the part about her unplanned pregnancy! After becoming a stay-at-home-mom, she started her blog to keep her recipes organized, as well as to stay in touch with her adult self. Something a lot of us SAHM's can relate to!

While Jamie doesn't have a lot of options for my restrictive diet, I was able to find a few yummy recipes that were easily adapted with just one or two ingredients that didn't compromise the original recipe. Her Apple Pie Dip, Apple Bacon Coleslaw, and Ginger Chicken with Apricot Dijon Sauce were big contenders.

I ultimately settled on her Creamy Cilantro Lime Dip as my reveal day choice. I eat a lot of vegetables, but eating them cooked or raw can get a little boring sometimes. Having a healthy, and dairy free dip is a great way of livening those plain veggies up, and is also a great recipe to have on hand for parties and gatherings. That, combined with my love of all things cilantro, made it an easy choice. Jamie's original recipe called for cream cheese, which I cant have because I'm lactose-intolerant, so I subbed in coconut cream, which I've found in the past to be a great substitution for things such as mayonnaise, and sour cream when you add either vinegar, lemon or lime juice to give it that tangy factor.

The dip turned out to be delicious and I had a hard time not devouring the whole bowl in one fell swoop. The key to success with this recipe, is to make sure you allow it time to chill in the fridge before you dive in. It really does make all the difference in the world in the flavor of this dish. If you still find it a little bland after the initial chill time of 1 hour, add a sprinkle of sea salt as I did. It finished the taste off perfectly.

Coconut Cream Cilantro Lime Dip

  • 1 cup coconut cream
  • 3 cloves garlic, minced
  • 1 small bunch cilantro, chopped
  • 1 tablespoon fresh dill, minced
  • Juice of one lime
  • Sea salt to taste (optional)
  1. Place all ingredients in a medium bowl. Stir well to combine.
  2. Cover and chill until ready to serve, at least one hour.
  3. Serve with assorted veggies.
