This is a quick dishthat couldn't be easier to prepare. Fully-cooked smoked sausage, bell peppers, and onion combine for a simple but satisfying one-dish main course. Serve with rice or pasta on the side to round out the meal. You could even use this to make sandwiches, which is my husbands favorite way of eating it.

Smoked Sausage with Peppers and Onion
1 pound package smoked sausage, cut into bite size pieces
2 bell peppers, chopped
1 medium onion, chopped
1 tablespoon olive oil
1 clove garlic, minced
Salt and pepper to taste
Heat oil in a large skillet over medium heat. Add the onions, bell peppers, salt and pepper. Cook, stirring occasionally, until the vegetables are soft and slightly caramelized, about 5 minutes.
Add the smoked sausage and garlic and continue cooking, stirring occasionally until warmed through and well blended, about 5 - 10 minutes.
Taste for seasonings and serve over Rice or Cauli-rice.
