With apple season in full swing, it's no wonder apple recipes are on a lot of peoples minds. Who can walk by a display of beautiful red, green, and golden yellow apples, and not buy some to take home. While you'll certainly enjoy eating them fresh, make sure you save some to make an apple pie. Not just any apple pie though, amp it up by making an apple crisp pie!
This recipe is a wonderful twist on the traditional apple pie. It combines the great taste of apple pie with the slight crunch of an apple crisp, then is drizzled with warm caramel sauce and a sprinkling of crunchy pecans. Have I tempted you enough yet? Then lets get to the recipe!
Caramel Apple Crisp Pie
Single-Crust Pie Dough
1/2 cup sugar
3 tablespoons flour
1 teaspoon cinnamon
1/8 teaspoon salt
6 cups thinly sliced peeled apples (I used granny smith)
1 cup packed brown sugar
1/2 cup flour
1/2 cup rolled oats
1/2 cup butter
1/4 cup Caramel Sauce
1/2 cup chopped pecans
Prepare pastry and place in pie plate, trim and crimp the edge.
In a large mixing bowl stir together the sugar, flour, cinnamon, and salt.
Add apple slices and gently toss until they are well coated.
Transfer apples to pie crust.
In a medium sized bowl stir together the brown sugar, flour, and oats.
Using a pastry blender, cut in the butter until topping resembles coarse crumbs.
Sprinkle oat mixture over the apples in the pie crust.
Cover edge of pie with foil and bake at 375 degrees for 25 minutes.
Remove foil from pie and bake for an additional 25 to 30 minutes more, or until top is golden brown.
Remove pie from oven and drizzle caramel sauce on top of the pie, then sprinkle with pecans.
Allow to cool on a wire rack.
