Summer wouldn't be the same without one of my favorite foods, potato salad. I can’t imagine a picnic or backyard barbecue without a big bowl of it sitting on the table. There are many different potato salad recipes available and they all have their merits, but this is the one I grew up eating and still love the best.
This cold, creamy side dish has just a slight crunch, and goes so well with any BBQ or cook out on the grill menu. Homemade taste way better then the store bought stuff, and isn't difficult to make at all. You can have a bowl of this made and in the refrigerator, to give the flavors time to blend, (Cold potato salad is the best)! in about 45 minutes or less. What are you waiting for? Mom's Potato Salad
6 large potatoes, cubed
4 hard-boiled eggs, chopped
1/4 cup dill pickle relish (This is the only thing I do different from my mom's recipe, she liked sweet relish in hers)
1/3 cup chopped onion
2 tablespoons yellow mustard
1 cup mayonnaise
salt and pepper to taste
Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 8 minutes. Drain and rinse immediately with cold water to stop the cooking process.
In a large bowl, combine the potatoes and eggs. In a separate bowl mix mayonnaise, mustard, dill relish, onion, salt and pepper. Add mayonnaise mixture to potatoes and eggs and mix gently. Add just a bit more mayo if the mixture seems to dry.
